Rolls and Rolls!

-White Bread or Rolls Recipe-
--------------------------------------------

150ml warm water
2 tablespoon sugar
750g flour
4 tablespoon olive oil/ 40g butter
2 teaspoon Salt
20g fresh yeast/ 10g dry active yeast

Heres a step by step guide..but i'll skip the easy parts:

1) In a measuring cup - 150ml of warm water, stir in sugar then add yeast. leave for approx 5 mins the yeast should start to foam/bubble and rise to the top.

2) in the yeast mixture, pour olive oil and top warm water in till 435ml (when topping warm water...NEVER pour hot water in then cold..the water should always be a constant warm temp)

3)In a big bowl, mix salt and flour together first. Then add in the yeast mixture and use ur hands to slowly mix until it forms a dough (below)

4) Take the dough out and knead and stretch it for about 10 to 15mins or until it bounces back when touched.


Test the dough's bounce:

The example above : after u press ur fingers in..and the dough keeps the shape and doesnt bounce back.. u need to continue to knead it more




5) Press the dough when it bounces back when pressed...place it in the bowl and clingwrap it. Leave bowl in a warm dark place for at least a hour or 2.



6) The dough should have risen to more then 2 twice its size. if not let it rise until it is.



7) When your dough has risen, punch it down into the bowl.


8) Take it out and shape to the desired shapes. Oil then dust with flour ur pans and trays before placing ur dough in. If making loaves...slash diagonal lines across the dough (take note that the dough will rise at least 3 times its current size so plan ahead :) )

9) Cover your dough with a cloth and leave it to rise for 2 hours at least...it should rise about 3 times its size.

I made scones too~~!!!




10) After letting it rise, remove the cloth and either eggwash or coat the top of the loaves with oil and add wateva u want to include...like herbs or nuts.



11) Preheat at 220c and bake at 200c for 40-45mins.





best eaten fresh~!!

This sunday i made a layered cake cos i felt like it....
Didnt take me long...abou 3 hours or less to make this and 15 other cupcakes!!







You can see the icing is kinda like slapped on..it was meant to look like that!! dont u think it feels more edible when its made this way? more homely haha!!

Sticky Buns & Bread

Since i've started work i havent got time...but now that i got alittle free time...i did some baking.

These are sticking rolls waiting to rise before going into the oven. :))
The thing is...according to the recipe i left them in the fridge overnight to rise..but i honestly think it rose too much so the next time i'll maybe let it rise for 2hrs before baking.

I should add more sugar cinnamon in the centries..and more syrup on top!! hahah wasnt enough.

Sticky buns arent as good when they come out from the oven..they taste better when they cooled for an hour or so :)


Bread Rolls...i followed a channel 16 travel and living show..i think its Rachael ____ : Bake! haha i forgot her name.... anyway it turn out nice...

I sprinkled rosemary on the bread and it smells absolutely lovely and when u eat it...its wonderful for sandwiches...plain ones are great for butter and jam~!!


Loaves...unfortunately my sister was cooking ribs with the bigger pan so i could only use the pizza pan to bake my bread...and they conjoined together!! lol...baby loaves..so cute.



I love them...If you like the reciepe i can post it the next entry...im just wondering if i should do a tutorial version of it. hmmm should i or not?

Anyway sorry of late i've not been bothered to take pictures nicely to produce a nice shoot...lazy to buy nice wallpaper/wrapping paper...nice places or flowers or wateva... and mostly a better camera..haha..ok sorry u have them raw and uneditted for now lol!

Lemon Meringue Pie

This is a mini Meringue pie.. actually its not that tall i just placed it on a souffle bowl so that it looks nicer haha!!

Out of stress from exams, i needed time off..i decided to make lemon meringue pie but ended up with lemon as well as chocolate+raspberry pie fillings.


Did u know squeezing and grating 4 big lemons needs alot of work! so damn tired.





Horrible table setting..actually its just my room.





My personal notes...collections of things i love.






Initially i was quite dissappointed with the pie cos the cream didnt seem to thicken even after i baked it.. i though i failed but after i refrigerated it last night..i took it out this morning and the texture was really nice...the taste was sweet and tangy i love it.
It turned out more like lemon cream than curd.

Cake fest!

I duno why or wat has gotten me into a cake baking frenzy...
This is the 2nd cake i've bake in this week...well i didnt bake it...my sister did...i meerly just decorated the cake.

She wanted this cake for her boyfriend's grandmothers 85th birthday! lol The strawberries were add ons by her bf.

I thought this cake turn out really gorgeous (better looking in actual view) except i haven quite prefected doing the sides that well.. i Love the pastel colors and all..v romantic...

Kenny(her bf) said it looks like a wedding cake.























Anyway i found out the cake didnt go too wellwith the crowd...cos it was too sweet for some...singaporeans dont have a thing for sweet western pastries...anyway i think its cos the whipped cream has sugar...i didnt ssee...i bought the one with sugar inside already :P my bad!




My failure attempt to do a fresh cream flower. haha
