CA cafe @ Dempsey


So i went about trying some cakes from CA in Dempsey after work one day...i'd say they were good but not the best i tried.

However their lemon tart was exceptionally wonderful and that would be the tiny piece of heaven that will keep me coming back again :)

Easy Peasy Dessert that is delicious, light, healthy and easy!!



i think i've shown this one before but i found some old photos and decided to post them!



step 1: in a bowl mash half a box of raspberries and Blackberries each.



Step 2: Whip whipping cream(unsweeten)


step 3: Wash and cut strawberries, prepare ur blue berries/blackberries/raspberries for toppings.



Step 4: pour your mash berries into ur whipped cream, take half a meringue *about have the size of ur hand. and break them into small pieces into the cream. stir roughly



Banana Cake!!



Assemble : pour into serving glass ur whipped cream, add ur fruits and then sprinkle bigger chunks of meringue on top of the fruits (add mint leaves for color/deocration)

Tea Parties in Summer.



I organized a teaparty recently for my bestie ashie's 21st birthday party..we had it in the botantics and she wanted a very girly floral theme... one of the best birthday party celebrations yet!!


we had lots of fun .




will post other party pictures in my blog soon..(i hope)



I sewn this gigantic pieces of fabric together to form a huge giant floral mat...its so lovely (you can see the the background)


and i cushioned it too :)) anyway i made the cookies and cupcakes as usual.

I've asked my good fren felicia to make some macaroons for me...i always loved how pretty they were


however often too sweet for my tastbuds



i only ordered 20 that day and soon realise it wasnt enough lol...so after a few days (and nights) of temptations...i've decided to attempt her recipe! lol



=Chocolate Macaroons=



i'm surprised they turned out well (if not for the irregular shapes from unskilled piping lol!)


texture and taste is great..easy and surprisingly fast to make~!! i made like 30 or 40 in 2hours...



Felicia said its also cos i've made tons of meringue so its really much easier for me haha! i see some truth in that!! cos i've heard that macaroons are one of those delicate things to make that dont often turn out well..

mac wannabe pancakes

how lovely to start the day with macdonalds pancakes...well..except when i woke up its already past 11am..so i decided to search for a hotcakes receipe...this is the end result.

Pancakes with orange syrup. YUM! :P




so i found this reciepe its truely good but not really like macdonalds per se.. but i think making good pancakes boils down to heat and timing...get it too hot and u wont get the color right..flip it too fast or slow could ruin ur pancakes.





anyway try this reciepe out..the cakes are nice and fluffy and asborbs all the maple or orange syrup u could possibly pour onto it mmmmmmhmmm....!! haha


ENJOY!


-I wannabe Mac Pancake mix-
1/3 carbonated beverage (lemon-lime/soda/coke/7up etc...)
1 egg
1 tablespoon sugar
1 tablespoon oil
1.5 cups biscuit mix


Prepare biscuit mix:
- 1 cup flour
-1.5 teaspoon baking soda
-0.5 teaspoon salt
-1 tablespoon shortening (i use butter)

mix until well incorporated.

1) mix biscuit mix + salt+ sugar + egg + beverage into a bowl
2) use a mixer and blend on high for afew seconds (dont overbeat) texture should be milkshake like...add more soda if its too dry.
3) let stand for 10 mins before using batter

* heat pan on low heat and pour batter in, wait till bubbles appear on the sides, flip over and let it cook for a 2 mins or so.
(really you'll get the hang of it...how and when to flip it)
** i usually use soda water or 7up but i've heard pple using other types of can drinks..though not advisable.


=orange syrup=
- 1 orange
- 3/4 cup water
- 5 tablespoon sugar
- 1 tabespoon honey
1) peel orange skin and leave 2 or 3 strips aside
2) slice orange into small slices
3) in a small pan, bring water to a boil and add ur sugar and orange slice in (keep stirring)
4) wait for syrup to thicken slightly then add the orange slices and honey
5) keep stirring until syrup comes to the consistence that you desire.
6) pour over pancakes.

Rolls and Rolls!

-White Bread or Rolls Recipe-
--------------------------------------------

150ml warm water
2 tablespoon sugar
750g flour
4 tablespoon olive oil/ 40g butter
2 teaspoon Salt
20g fresh yeast/ 10g dry active yeast

Heres a step by step guide..but i'll skip the easy parts:

1) In a measuring cup - 150ml of warm water, stir in sugar then add yeast. leave for approx 5 mins the yeast should start to foam/bubble and rise to the top.

2) in the yeast mixture, pour olive oil and top warm water in till 435ml (when topping warm water...NEVER pour hot water in then cold..the water should always be a constant warm temp)

3)In a big bowl, mix salt and flour together first. Then add in the yeast mixture and use ur hands to slowly mix until it forms a dough (below)

4) Take the dough out and knead and stretch it for about 10 to 15mins or until it bounces back when touched.


Test the dough's bounce:

The example above : after u press ur fingers in..and the dough keeps the shape and doesnt bounce back.. u need to continue to knead it more




5) Press the dough when it bounces back when pressed...place it in the bowl and clingwrap it. Leave bowl in a warm dark place for at least a hour or 2.



6) The dough should have risen to more then 2 twice its size. if not let it rise until it is.



7) When your dough has risen, punch it down into the bowl.


8) Take it out and shape to the desired shapes. Oil then dust with flour ur pans and trays before placing ur dough in. If making loaves...slash diagonal lines across the dough (take note that the dough will rise at least 3 times its current size so plan ahead :) )

9) Cover your dough with a cloth and leave it to rise for 2 hours at least...it should rise about 3 times its size.

I took this picture halfway..it should rise more than that...



I made scones too~~!!!




10) After letting it rise, remove the cloth and either eggwash or coat the top of the loaves with oil and add wateva u want to include...like herbs or nuts.



11) Preheat at 220c and bake at 200c for 40-45mins.





best eaten fresh~!!
