Hello guys..

I havent been baking for sales recently but from time to time i do make desserts for my family.

Last weekend i went over to my aunt's house to stay for some "me" time, R&R or wateva u call it... I made this simple yet really good dessert for the family. I saw it on nigella once.. yup so i figured i make it..




I made for them essentially berries with whipped cream and meringue. Sorrie if it doesnt look great on the picture..i only quickly took it with a cam phone before it got stolen!!
Anyone can do it...especially if u are cooking a 7 course meal and u need something tat looks presentable and good yet takes
VERY LITTLE TIME TO PREPARE....



Ingredients: Makes for 10 people (approx)

1L whipping cream
3 packs of berries of ur choice
(blueberries/ raspberries/blackberries/strawberries)
2 tablespoon of blackberry liquer/rum/any berry liquer or ur personal fav.
1 meringue (from gastronomia)
approx the size of ur whole entire hand

-In a small bowl, pour half packet of blackberries and raspberries respectively into a bowl.
- Pour in 2 tablespoons of liquer/rum/personal choice...add more if desired.
- mash the berries into the liquer, soaking it up. It should be lumpy bits..dont over mash.

- Whip cream in another bowl until soft peaks form.
- Combine/ pour berries mix and crush 2/3 meringue into small bits and powder into whipped cream
- Stir well until evenly blended.

- Find 10 nice serving classes and gently plop the whipped cream into glasses.
- Decorate with berries and crush reminding meringue on top for dusting.


** Strawberries/blueberries should only be decoration berries, Raspberries/blackberries are reccomended for mixing in the whipped cream instead.

** you may prepare the whipped cream ahead of time and chill it. only decorate with berries and meringue right before serving

Some of you have ask me for this recipe so here it is:


Lemon Cheesecake with Strawberry topping (serves 8)


50g unsalted butter
25g light soft brown sugar
45ml golden corn syrup (3 tbsp)
115g or 1 cup of cornflakes
11g sachet powdered gelatin 2
25g soft cheese
150g greek yoghurt
150ml single (light) cream
finely grated rind and juice of 2 lemons
75g caster sugar
2 eggs separated
1 packet of strawberries
1/4 packet strawberry jello

- Place butter, brown sugar and syrup in a pan and heat over a low heat stirring until mix has melted and well blended. Remove from heat and stir in cornflakes.

-Press mixture over the pas of a 30cm loose base round cake tin and chill for 30mins

-Sprinkle gelatin over 45ml water in a bowl and leave to soak for a few mins. place the bowl over a pan of simmering water and stir until gelatin is dissolved.

-Place the cheese yoghurt, cream, lemon rind and juice, caster sugar and egg yolks in a large bowl and beat till smooth and thoroughly mixed.

-Add the hot gelatin to the cheese mixture and beat well.

-Whisk the egg whites until stiff peaks and fold into the cheese mixture.

-Pour mix over the corn flakes base and level surface. prepare strawberry jello mixture and cool slightly

- Slice strawberries and place them in radiating order starting from outside - in.

- Pour Jello mix over strawberries just to coat strawberries with a nice glossy shine.

-Chill for 4 to 5 hours or until filling is set.
